For those wanting to travel by train to Hythe here is what a few of us are doing:
Burgess Hill 09.01 Brighton 09.15
Brighton 09.32 Ashford 11.18
Ashford 11.32 Folkestone 11.50
from Folkestone it's either a taxi ride or a trip on the number 16 bus from the station.
Once in Hythe there are a couple of pubs to choose from, the very very good Three Mariners which I have visited on my last few trips and there is also the Red Lion Hotel.
Trains on the way back:
Looking at the times you can get back slightly earlier if you go back via Tonbridge, Sandling is the nearest station to Hythe Town FC but is mostly up a steep hill and a 30 minute walk, local taxi numbers are:

Train times from Sandling are:
Sandling 17.43 Tonbridge 18.39
quick half in the pub next to the station...
Tonbridge 19.10 Redhill 19.45
Redhill 20.00 Gatwick 20.08
Gatwick 20.23 Burgess Hill 20.38
for Deeudon, it will be the 20.20 from Gatwick.
